Plant in well-drained soil and full sun to partial shade. Sow seeds ½ inch deep, spacing them 1 inch apart in rows 12-18 inches apart. Thin seedlings to 3-4 inches apart. Keep soil consistently moist. They thrive in cooler temperatures. Beets are ready to harvest in about 55-65 days when they reach golf ball size. Gently pull or dig around the root to avoid damaging the bulb. Leaves are also edible and nutritious.
